Horse meat beshbarmak is a classic version of this delicious dish. Young horse meat is difficult to buy, and you need cooking skill, but if you have such meat, then the recipe is for you. Horse meat is cooked for a long time, 4 hours, and therefore it is better to cook it in nature and on a fire, but you can cook beshbarmak at home. We take ready-made noodles for the dish.

Horse meat, preferably young and unfrozen, rinse well under running water and pat dry with a paper towel.

Place the cauldron, half filled with clean water, on the fire, put the horse meat in it and bring to a boil. Then remove the foam from the surface, put the peeled onion, celery root and carrot in the broth and cook the meat over low heat for 3-4 hours.

30 minutes before the end of cooking, put the rest of the onions, cut into large rings, into the broth.

Peel the red sweet onion and cut it into large rings as well.

Then transfer it to a separate saucepan, cover with fat and broth, sprinkle onions with salt and black pepper and leave to infuse.
