Chicken and pork beshbarmak

Pork and chicken beshbarmak cannot be called traditional. This is an Asian dish adapted to the European taste, and its advantage is that it takes less time to cook meat. The combination of fatty pork and light chicken meat will allow you to prepare a fairly hearty and tasty dish. Pork for beshbarmak is cooked for 1.5 hours, chicken for 1 hour. Otherwise, the way of cooking and serving the dish remains traditional.

Rinse pork and chicken and cut into large pieces. Place the pork in a large saucepan first, cover with water and bring to a boil.

When the broth boils, remove the foam from the surface and cook over low heat for 30 minutes. Then put the chicken in the broth and cook for another hour. Add salt to the end of cooking and add laurel leaves, peeled onions, carrots and black peppercorns.

While the meat is cooking, knead the noodle dough. Break eggs into a bowl for kneading dough, add ¼ tsp. salt and stir with a fork.

Then add the sifted flour in portions, pour in the vegetable oil and knead the dough first with a fork, and then knead well with your hands. It should be tight. Place the dough in a bag and refrigerate for 30 minutes.
