Cut the processed duck into pieces.

Then place it in a saucepan, cover with clean water, add salt and cook after boiling over low heat for 2 hours so that the meat easily separates from the bone.

While the meat is cooking, knead the noodle dough. Break eggs into a bowl for kneading dough, add a pinch of salt, add vegetable oil and mix.

Then pour in the sifted flour in portions and knead the dough first with a fork, and then knead it well with your hands on the work surface of the table. It should be tight. Place the dough in a bag and leave to rest for 30 minutes.
