Very soft, tender pastry dough. We cook it in a custard way, without adding yeast, in water. The dough turns out to be soft, pleasant consistency and comfortable to work with. As a filling, you can use whatever your heart desires - both sweet and snack options.

To prepare the dough, pour the specified amount of water into the pan. Put butter, salt in the water and put the saucepan on the stove. Bring the contents to a boil. The butter should melt.

Pour one glass of flour into the resulting boiling mixture and mix quickly with a whisk to immediately break all the lumps.

Remove the pan from the stove and break the eggs into a hot flour mass, one by one, kneading thoroughly after each addition.

Gradually add the remaining flour along with the baking soda and knead the dough with your hands.

It should turn out to be soft, elastic, not cool. Roll the dough into a ball, place in a bowl, close the lid and leave for thirty to forty minutes to "rest".

Lightly sprinkle the work surface with flour. We spread the dough from a bowl and cut it into two parts, each of which is then rolled into a tourniquet and cut into small pieces, according to the desired size of the pies. Roll each piece of dough into a ball.

Roll each ball into a thin cake, in the middle of which we spread the filling - in this case, this is mashed potatoes with fried onions and spices.

Connect the opposite edges of the cake and pinch tightly with your fingers. Press lightly with the palm of your hand to give it a flatter shape.

In a frying pan, heat up such an amount of vegetable oil so that it covers the bottom with a layer of one to one and a half centimeters. We heat the oil until hot and lay out the pies. Fry from both sides until golden brown over medium heat.

After frying, dry the finished pies on a paper towel so that it absorbs excess fat. We serve hot or warm pies. After cooling down, it is convenient to reheat them in the microwave.
