Yeast-free bread in a sourdough bread maker

Sourdough bread is considered more natural and healthy. It will take more time and hassle, but the result is worth it. We will use rye and wheat flour in a ratio of one to five - this will give the optimal density and porosity. We also add honey to the composition. The bread maker greatly facilitates the process of making such bread, since both kneading and proofing are provided by the automatic capabilities of the device.

The first step will be the preparation of the dough. To do this, put a sourdough or sour starter in a bowl, 100 grams of water and 100 grams of rye flour from the total amount.

We put the program "Kneading" with proofing. The time required for the preparation of the dough is approximately four hours. It is important that the mass doubles.

When the dough grows up, put the rest of the ingredients: the remaining warm water, honey, both types of flour, salt and granulated sugar.

We put the dough for kneading and proofing for one hour, and after that we turn on the kneading again for fifteen minutes.
