Sponge cake without butter

Sponge cake is the most common cake base. Usually it is a light and juicy sponge cake based on whipped proteins. It can be cut into several thin cakes, greased with your favorite cream and decorated to your liking.

Separate the whites from the yolks. Begin to beat the whites on a slow mixer speed, add sugar and vanillin one spoon at a time. Continue whisking until a stiff, dense foam forms.

When the protein mass becomes white and dense, add the yolks, continue beating.

Add sifted flour to the egg mass, mix gently with a spoon. Knead the dough until smooth.

Line a baking dish with parchment, pour the dough into it. Preheat the oven to 190-200 degrees and bake a biscuit in it for 20-25 minutes.
