Sponge cake for 4 eggs

What kind of biscuit recipes have not been invented: both with soda, and with the addition of vegetable or cow oil, and cottage cheese, etc. However, in our opinion, there is nothing better than a classic biscuit made of flour, eggs and sugar, if you need a base for the cake or if you want to bake something tasty in a hurry. According to our recipe, you will quickly master the preparation of a biscuit from 4 eggs. To make such a biscuit lush and not a donkey, bake it in a split form with a diameter of no more than 20-22 cm.When the biscuit has completely cooled down, it can be smeared with jam, cream or boiled condensed milk.

Ingredients

Cooking process

step 1 out of 8
Separate the egg whites from the yolks. Add half of the indicated amount of sugar and vanilla sugar to the yolks.
step 2 out of 8
Rub the yolks with sugar until the mass turns white and its volume increases. This can be done with a regular fork, or with a mixer or whisk.
step 3 out of 8
You can add one third of a teaspoon of citric acid to the proteins for a better whisk. Begin whisking the egg whites on medium mixer speed, then add the rest of the sugar and beat until soft peaks form.
step 4 out of 8
Separate one third from the whipped whites, add them to the whipped yolks, and stir very gently with a cooking spatula.
step 5 out of 8
Pour baking powder into the sifted flour, mix, add to the total mass and stir gently.
step 6 out of 8
Add the remaining whipped whites into the dough and mix very gently with a spatula, do it lightly, but not for long, so that the beaten eggs do not fall off.
step 7 out of 8
Smear the baking dish a little with vegetable oil and line it with parchment (if you do not have baking paper, you can grease the baking dish and sprinkle with crushed breadcrumbs or flour, then shake off the excess flour). Put the dough into a mold with a spatula, smooth on top. Preheat the oven in advance to 180 ° C, the baking time is individual, but on average it takes 30-35 minutes. Check the readiness with a match: if it is dry, then the biscuit is already ready.
step 8 out of 8
When the biscuit is baked, cool it in a mold in a slightly open oven, then put it on a wire rack and let it cool completely. Decorate the cooled biscuit at your discretion and serve.

Bon Appetit!

Tip: do not open the oven unnecessarily so that the biscuit does not fall off, at least for the first 25 minutes of baking. The finished biscuit easily bounces and recovers if you press it with your finger.
