Often, a biscuit cooked on proteins alone is also called Angelic, and all because it has a white color and a very light and delicate texture, good porosity and a thin crust. If you want to bake such an unusual sponge cake, use a small diameter mold for this purpose, because it can settle in the middle. A cupcake pan with a hole in the middle is also fine. Sponge cake on proteins can be eaten as an independent sweet dessert, soaked in syrup and garnished with whipped cream, or you can cut it into 2-3 cakes, grease them with cream and put together into a beautiful cake.

Let's start by making meringue - whipped proteins. Use lemon juice or vinegar to wipe the whipping bowl so that not a drop of fat remains on it. Pour the whites into the whipping bowl, add a pinch of salt, beat until a strong foam appears.

Then add powdered sugar in portions, constantly whisking the whites; adding vanilla sugar or vanillin if necessary. Beating should be finished as soon as traces of a whisk remain on the whites; you do not need to beat them to strong peaks, otherwise the biscuit will turn out to be very tough.

Sift the sifted flour into the proteins and stir with a wooden or silicone spatula, making smooth, but fast and confident movements from bottom to top. If you mix the proteins with flour for a long time, they will settle and will no longer be airy.

Wrap the bottom of the detachable metal mold with foil (the volume of the handicap is no more than 20 cm), but do not grease the mold with oil, otherwise the biscuit may not rise. Pour the biscuit dough on its bottom, bake in an oven heated to 180 degrees. The baking time is individual, check the readiness of the biscuit with a wooden stick after 25 minutes. Remove the finished biscuit from the oven, it will fall off a little, which is quite normal.
