Sponge cake on kefir

From a simple set of products, you can cook aromatic and airy pastries in the oven. Such a delicate biscuit can be served as an independent dessert under a cup of tea and conversations with the family, or used as a base for a cake, supplemented with cream and filling.

Remove the eggs and kefir from the refrigerator in advance so that they acquire the desired temperature. Beat eggs in a deep bowl with a mixer until fluffy.

Add sugar gradually, without ceasing to stir, and beat for 8 minutes until the sugar crystals are completely dissolved.

Pour vanillin into it, kefir heated in the microwave to a warm temperature, and stir with a mixer. Do not overheat the kefir, otherwise the eggs will curl.

Separately sift flour 2 times, add baking soda, salt and stir with a whisk.

If not, return the mold to the broiler and continue cooking for another 5 minutes.
