Biscuit roll with cottage cheese is the most delicate delicacy that will appeal to both adults and children. The biscuit prepared according to this recipe is delicious in itself, and in combination with the curd filling, it acquires a simply delicious taste.

At the very beginning, you can already turn on the oven for heating, setting the temperature regime to 200 degrees. Separate the whites from the yolks. We arm ourselves with a mixer and begin to beat the whites at first at low speed. Then we gradually add granulated sugar and increase the speed of revolutions. Beat the whites with sugar until a stable mass is formed.

Next, we shift the yolks into the working container and gently mix the mass from bottom to top with a spatula.

After that, pour sifted wheat flour into the resulting mass. Gently mix everything until smooth, but do not whisk.

Cover the baking sheet with parchment, then pour the dough onto it. We put the biscuit to bake in a hot oven for 20-30 minutes until golden brown. Put the finished biscuit on a towel, separating it from the parchment. Then we roll up the pastries into a roll, cool in this form.

Let's move on to the filling. Soak gelatin in water for 15 minutes. After that, we heat the gelatin in a water bath, returning it to a liquid state. Cool it down.

We shift the cottage cheese into a convenient container. Then pour cream into it, add granulated sugar and vanilla sugar. Using an immersion blender, punch the curd until a homogeneous mass is formed. At the very end, pour the cooled gelatin into the curd filling. We punch everything again with a blender.

We unfold the cooled biscuit, cut off the edges and coat it with curd filling.

Then we roll up the sponge cake with the filling into a roll, sprinkle with powdered sugar and send it to the refrigerator for 4 hours.
