Today we will make delicate pancakes without the use of milk. We replace it with boiling water, thereby brewing the dough and giving it the required consistency. The pancakes are airy, porous and very tasty. These pancakes are ideal for breakfast, you just need to complement them with your favorite jam and a cup of strong aromatic coffee.

Break eggs into a deep bowl, add sugar and salt. Beat with a mixer until a lush foam is formed. Then, without stopping stirring, add half the norm of room temperature water. Sift flour into the resulting mass. Stir at medium mixer speed so that there are no lumps.

Pour the remaining amount of water into a saucepan and bring to a boil. After that we add soda to boiling water, and then, stirring continuously, we introduce the resulting solution into the dough, thus brewing it. Finally, add vegetable oil to the dough. Leave the dough for 15-20 minutes at room temperature to infuse and cool slightly.

Set the pan for baking pancakes to warm up over medium heat. Lubricate it a little with vegetable oil. Pour half a ladle of dough into the middle of the pan and distribute it evenly over the pan.
