Even as a child, when I came to my grandmother in the village, she always treated me to delicious lush yeast pancakes. For a long time I could not find this recipe anywhere. And once on Shrovetide, a friend treated me to the same pancakes. In turn, I want to share with you this old recipe.

Heat half a glass of milk. The milk should be warm, but not hot. Add dry yeast and stir. Tighten with cling film and leave in a warm place for 10 minutes. Heat the remaining milk too. Pour the dough gently into warmed milk, add granulated sugar and salt.

Sift the wheat flour into a separate container.

Add the sifted wheat flour little by little to the milk mixture, gently stirring with a whisk. The consistency of the dough should be like not thick sour cream.

Break a chicken egg into the resulting dough, mix. Tighten the dough with cling film and place in a warm place for 15-20 minutes. The dough should increase several times. Stir the dough and leave in a warm place for another 15 minutes.

Heat the pan well over medium heat, pour in a small amount of vegetable oil. Using a ladle, pour some dough into the pan and spread evenly over the entire surface.

Fry the pancake for a few minutes, then use a wooden spatula to turn it over to the other side and fry until golden brown.

This way, fry all the pancakes. Place hot pancakes on top of each other, grease with butter if desired.
