On the eve of Maslenitsa, we are sharing with you a recipe for delicate thin pancakes stuffed with minced meat. To diversify the meat filling, we added cabbage to it - it turned out to be an excellent version of the juicy filling. These pancakes can be prepared for future use and frozen in the freezer. They keep well and do not lose their amazing taste after defrosting.

Peel the onion, rinse it and chop it into small cubes. Peel the garlic and chop it into small cubes too.

Finely chop the cabbage. Put the onion and garlic in a preheated pan with vegetable oil and sauté until golden brown. Then put the cabbage in a pan, salt and pepper and fry over high heat for a couple of minutes. After the cabbage has started up the juice, we reduce the heat, cover the vegetables with a lid and simmer in our own juice until half cooked.

Then, put the minced meat in the pan, mix it with vegetables, add dried herbs and bring the filling to full readiness. After that, sprinkle the filling with fresh chopped herbs, leave to cool the filling.

During this time, we will knead the dough into pancakes and fry them. Beat the eggs with sugar using a whisk, then add the sifted flour and add milk in several stages. Mix the dough well so that there are no lumps. Put the pan for pancakes on fire, grease it with vegetable oil and pour 2-3 tablespoons of dough. Fry the pancake until golden brown, then turn over and fry on the other side for about 30 seconds. Thus, we fry all the pancakes.

Put a tablespoon of filling in each pancake and fold the pancake into an envelope. If you get a lot of pancakes, you can freeze them by placing them in freezer bags.
