Zucchini pancakes with filling

We offer you a recipe for zucchini pancakes stuffed with minced meat. This dish can be either a great breakfast or dinner, or a complete second course served for lunch. You can make minced meat yourself or buy it in the store, although, of course, any dish turns out to be much tastier with homemade minced meat.

For minced meat, peel carrots, onions, finely chop (grate carrots). Fry the minced meat in vegetable oil, stew a little, add chopped vegetables, garlic and herbs, spices and salt. Simmer until tender.

Young zucchini can be cooked with the skin by removing the tips, but from the old ones you will have to cut the peel and remove the seeds. Then grate the zucchini, squeeze the juice.

Add chicken eggs, milk, flour and salt, ground black pepper or other spices to the zucchini. Knead the dough to the consistency of thick pancakes. Chop the greens, you can also mix them into the dough.

Pour a little oil into a preheated pan, then pour the pancake dough and fry the pancake on one side. Turn the pancake over to the other side and immediately place one and a half to two tablespoons of minced meat on it. Cover the pancake on top with its second part, as shown in the photo.

Then we squeeze the pancake with a spatula along the edges and fry it on all sides until fully cooked and a beautiful, ruddy color.
