Pancakes on kefir openwork

Openwork pancakes are always beautiful and unusual. To achieve such a structure in baking pancakes on kefir, boiling water must be an obligatory component of the pancake dough. These crepes are best served as a dessert with thick jam or preserves.

Pour kefir into a deep container. Put the kettle on to boil.

Crack chicken eggs.

Add granulated sugar and salt.

Using a mixer, mix the liquid ingredients thoroughly.

Sift the wheat flour using a sieve and add to the resulting mass in several steps. Mix well with a mixer.

Pour in a glass of boiling water.

Add baking soda to it and stir well.

Introduce boiling water into the dough in a thin stream, stirring constantly with a mixer.

Pour the required amount of odorless vegetable oil into the resulting dough. Stir. Tighten the pancake dough with cling film and leave to rest for 20 minutes.
