Pancakes according to this recipe are obtained with large holes, openwork. This is because during the preparation process, the method of brewing the dough with boiling water is used. These pancakes can be served with both sweet jam and various salty additions. They are tasty both hot and cold.

Break eggs into a wide bowl, add salt and sugar. Beat with a whisk until the ingredients are completely mixed.

Preheat the kefir to a warm state and pour it into the egg mixture. We mix everything together with a whisk.

Sift the flour and add it to the kefir-egg mixture. Knead the dough with a whisk until the lumps disappear completely.

Pour the boiling water into a separate container and add soda there. Mix quickly and pour into the dough. At the same time, continuously stir the dough with a whisk in a circle in order to evenly distribute boiling water with soda throughout the mass.

Pour vegetable oil into the dough, stir and leave it to stand for a quarter of an hour.

We put the pan on the stove and heat it until hot. Lubricate with a small amount of vegetable oil just before the first pancake. Since the dough already contains vegetable oil in the composition, there is no need to lubricate further during the frying process. Using a ladle, pour the dough in portions into a hot frying pan and fry the pancakes until golden brown over medium temperature.
