Delicate openwork pancakes on kefir stuffed with cottage cheese and raisins are an excellent breakfast option. These pancakes can be easily reheated by frying them in a skillet with butter. Therefore, you can cook them in the evening in order to enjoy their taste in the morning without wasting much time. Pancakes according to our recipe remain soft for a long time and are ideally combined with different types of fillings: sweet or meat. One has only to adjust the amount of sugar in the dough.

In a deep bowl, beat eggs with sugar and salt. Add kefir, soda and sift flour. Mix everything well so that there are no lumps, then add vodka. We boil the water and, without stopping stirring, add to the dough in small portions. Once again, knead everything well and proceed to baking pancakes.

Grease the pan with a small amount of oil, pour two or three tablespoons of dough and tilt the pan in different directions so that the dough spreads and we form a pancake of the required diameter. Fry the pancakes for two minutes on each side.

In a bowl, mix cottage cheese, sugar, vanillin and raisins soaked in boiling water and washed. Mix everything well - the filling for the pancakes is ready.
