For the curd filling, it is better to use fresh, high-fat curd. And for a sweet and sour accent, do not forget to add a little steamed raisins. We suggest frying pancakes on both sides at once, so that the finished envelopes can be served immediately or then simply heated in the microwave. Such pancakes for breakfast will come in handy - they look very appetizing, home-style and make you want to try them immediately. Before preparing the pancake dough, milk must be heated to a warm state.

To prepare the pancake dough, break the egg into a bowl and add sugar.

We heat the pan on the stove to a hot state and grease it with vegetable oil using a silicone brush just before the first pancake. We scoop up the dough with a ladle and pour it into the pan. Spread the dough all over the bottom of the pan and fry the pancake until golden brown on both sides. Put the finished pancakes on a flat plate and let them cool slightly.

To prepare the filling, wash the raisins with hot water and pour boiling water for five minutes. Then we drain the water, and dry the raisins on a paper towel. For the filling, of course, you can use cottage cheese of any fat content, according to personal preferences. But the most delicious mass is obtained from tender cottage cheese with a fat content of 9% -11%. Put the cottage cheese in a bowl, add vanilla sugar, prepared raisins and sour cream to it. Mix everything together with a spoon. Put the prepared filling in a small amount on a pancake and wrap it in the form of an envelope.
