Lenten pancakes

These pancakes are good for fasting or for those who decide to give up animal products. It contains flour, water, yeast, salt and sugar. Due to yeast fermentation, the dough is airy, and the finished pancakes become delicate. We add a small amount of oil to the dough, so you can simply fry such pancakes in a dry frying pan.

To prepare the dough, pour 150 gr into a bowl. warm water, add yeast, salt and one tablespoon of sugar to it. Stir everything with a whisk until smooth. Sift 100 gr on top. flour and mix until the lumps disperse.

We tighten the bowl with the mixture with cling film, and leave the dough in a warm place to ferment for 15-20 minutes.

When the dough is covered with bubbles and doubles, remove the film and add the remaining warm water, sugar and flour. Stir everything with a whisk by hand or with a mixer at low speed. Finally, pour in vegetable oil and mix.

We tighten the bowl with the prepared dough with cling film and put in a warm place. After about 40-50 minutes, the dough should have expanded and covered with fermentation foam.

Gently mix the matched dough again. Heat the pan on the stove until hot. If there is any doubt about the non-stick properties of the pan, before baking the first pancake, you can brush it with a little vegetable oil using a silicone brush. We measure out a portion of the dough with a ladle and pour it into a well-heated frying pan. We distribute the dough over the entire surface of the pan, tilting it in all directions. Fry the pancake until golden brown and turn it over with a flat spatula. Fry the second side also until golden brown.
