Pancakes with banana

Banana pancakes are great for breakfast, adding variety to the daily menu. In principle, any recipe for pancakes is suitable for such a serving, but we propose to cook them on kefir in a custard way so that they turn out to be delicate and delicate. Before wrapping the banana, it is worth smearing the pancake with melted chocolate. This makes practical sense: the filling sticks tightly to the surface of the pancake. And, of course, chocolate favorably sets off the taste of banana and visually decorates the dish, making it even more appetizing.

To prepare pancake dough, pour kefir into a large bowl. Pour boiling water into it in a thin stream, while stirring with a whisk. Break eggs into the resulting mixture, put salt, sugar and baking powder. Stir with a whisk until smooth. Pour flour in portions, kneading the dough with a whisk. The consistency should be homogeneous and liquid, with air bubbles. Lastly, pour in vegetable oil and mix.

Heat the pan until hot and grease it with a small amount of vegetable oil just before the first pancake. Fry thin pancakes for a couple of minutes on each side until golden brown. We put the finished pancakes in a stack on a flat plate, smearing each with butter.

Peel the bananas and cut them crosswise into two parts each.

Melt the chocolate in the microwave or in a water bath and grease the pancakes with the resulting mass before wrapping the banana.

Put half a banana on the edge of a pancake greased with chocolate.

We wrap the banana in a pancake in the form of a roll. Thanks to the chocolate, the roll stays tight and does not unfold. For decorative purposes, the edges of the pancake roll can be trimmed.

Put the finished pancakes with bananas on portioned plates, decorate with melted chocolate, pouring a thin stream across the rolls. Recommended to be served immediately after preparation.
