In addition to meat, the filling also includes boiled eggs and green onions. This adds juiciness and additional flavor. It is convenient to prepare such pancakes for future use, and to reheat or fry immediately before serving.

To prepare pancake dough in a wide bowl, mix eggs, salt and half of the milk. Add flour and knead to a homogeneous dough. When not a single lump remains, pour in the rest of the milk in a trickle and knead until completely homogeneous. Melt the butter in the microwave and pour into the dough, stir. It is recommended to stand the finished dough for half an hour before baking.
We pass the boiled beef through a meat grinder with a fine grate, mix with finely chopped boiled eggs. Fry chopped onions until blush in butter and add to the beef. Cut the green onions into small pieces and also put them in the filling mass. If the filling is too dry and crumbly, add a little broth in which the meat was cooked. Add the filling to taste and add black ground pepper.
Place the pancake with the more fried side up. Put a spoonful of the prepared filling in the center and wrap it in an envelope. We do this with all the pancakes, trying to evenly distribute the available filling volume. Before serving, fry the envelopes in vegetable oil on both sides until golden brown on the medium temperature of the stove. Serve hot.
