Pancakes stuffed with liver

And again the recipe for thin pancakes. Shrovetide after all! Today we will prepare thin pancakes that we already love. As a filling, we will use chicken liver, which goes well with onions and eggs. The pancakes are tender, and the filling is juicy and satisfying.

Ingredients

Cooking process

step 1 out of 11
Beat eggs into a bowl, add sugar and mix well with a whisk or fork. Then add vegetable oil and milk.
step 2 out of 11
Then sift flour into the dough and add baking powder. Knead the dough well with a whisk or mixer so that there are no lumps.
step 3 out of 11
Preheat the pan. Before baking the first pancake, you need to lightly grease the pan with vegetable oil. When frying subsequent pancakes, you no longer need to grease the pan. Put half a ladle of dough in the center of the pan and distribute it over the pan. Fry the pancake until golden brown, then turn it over and fry for about a minute. From the specified number of ingredients, we get 12-15 pancakes.
step 4 out of 11
Let's start preparing the filling: peel the onion, rinse it and chop it into small cubes. Put the onion in a preheated pan with vegetable oil and sauté.
step 5 out of 11
We wash the chicken liver, clean it from the films and send it to the pan to the onion. Fry it until tender for 8-10 minutes.
step 6 out of 11
Put the eggs in a saucepan, fill with water and boil until tender. Then we drain the water and fill it with cold water, so the eggs will cool faster. We clean the cooled eggs from the shell and rub on a coarse grater.
step 7 out of 11
We twist the finished liver in a meat grinder or grind it with a blender.
step 8 out of 11
Mix liver and eggs, add salt and pepper, mix well. The filling is ready.
step 9 out of 11
Put a tablespoon of the filling in the center of each pancake and fold the pancake into an envelope, taking turns folding the opposite edges of the pancake to the center.
step 10 out of 11
Before serving, fry the pancakes on both sides in a pan with vegetable oil until golden brown.
step 11 out of 11
Serve warm prepared pancakes. Bon Appetit!
