Curd pancakes

Cottage cheese for such pancakes can be used with absolutely any fat content. We suggest using whole grain flour to further enrich the composition. The sourness of the curd and the taste of whole grain flour combine well and complement each other. Ready-made pancakes are delicious with sour cream and honey.

We break the eggs into a bowl in which we will prepare the pancake dough.

Add cottage cheese to the eggs.

Pour sugar and salt on top. Punch the mixture with an immersion blender until a homogeneous liquid mass is obtained.

Pour whole grain flour and baking powder on top of the prepared liquid mixture. Knead the mass with a whisk. Gradually pour in water or milk whey in a thin stream, stirring continuously with a whisk.

The consistency of the finished dough should be liquid and flowing, like regular pancakes. We adjust the density with the amount of flour. At the end of cooking, pour in vegetable oil and stir.

Grease the pan for pancakes with vegetable oil before the first pancake and put on the stove. Warm up until hot. With a ladle, pour a portion of the dough into a hot frying pan and fry at medium-low temperature until golden brown. Turn the pancake over to the other side with a wide thin spatula and continue to fry until golden brown.

Put the finished pancakes in a stack on a flat plate, smearing each pancake with a small amount of soft butter. Serve hot.
