Mustard gives tomatoes a slightly spicy note, allows them to be stored for a long time under a nylon lid or in a barrel without the appearance of mold and keeps them firm. Adding currant leaves, horseradish and various spices to pickled tomatoes will diversify their taste and add a spicy aroma.

We wash the tomatoes under running water and put them on a cotton towel so that they dry from the water.
