Lingonberry sauce for the winter in jars

Many people know about lingonberry sauce, that it ideally complements meat and fish dishes, but few people know that such sauce is well stored in sterile jars for a long time, only in a cold place. A sauce is prepared either with wine (for an exquisite aroma and piquant taste), or with vinegar, you can add different spices, and you will get several types of sauce from lingonberries. Starch is often added to the sauce for thickening, and this sauce also keeps well.

We sort out the lingonberries, removing small forest debris and damaged berries. Then we rinse it well and remove excess moisture with a napkin.

Pour the prepared lingonberries into a saucepan with a thick bottom and pour one glass of water to it.

Then add the calculated amount of sugar to it.

Add the spices indicated in the recipe, or chosen to your liking, and a little salt and mix well with a wooden spoon.

Then bring the sauce to a boil over medium heat and cook over low heat for 7-10 minutes.

Cool the cooked lingonberry a little and grind it with an immersion blender, determining the degree of grinding to your liking.

Pour dry wine to the resulting lingonberry puree. We taste the sauce and add, if necessary, salt, sugar and, for additional sourness, lemon juice.

Re-put the sauce on low heat and bring to a boil.

To thicken the sauce, add starch diluted in water to it, mix quickly, bring to a boil and turn off the fire. Thicken the sauce with starch, if in doubt about the reliability of storage of the workpiece, you can also before use.

Pour the hot sauce into dry sterile jars, seal it tightly and, after cooling, put it in the refrigerator for storage.
