Fast squash caviar in a slow cooker

Zucchini caviar is very easy to prepare. It turns out even easier and faster if you use a multicooker. In this appliance, vegetables are stewed evenly from all sides, which ensures the speed of cooking. To grind caviar with an immersion blender, it is worth putting the vegetables from the multicooker into another container so as not to scratch the bowl cover. After grinding, return the caviar and continue stewing.

Wash the zucchini and dry it. Cut off the ends on both sides. If the zucchini is mature enough, you should also cut the skin and remove the seeds. Cut the prepared fruits into small cubes and pour them into the multicooker bowl.

We clean and wash the carrots. Peel the onions. Wash the bell pepper and cut it in half. We remove the seeds, cut out the stalk. Rub the carrots on a coarse grater, cut the onion and bell pepper into small cubes. Pour vegetables into a bowl on top of the zucchini.

Add vegetable oil to the vegetables, mix and place the bowl in the appliance. We select the "Fry" mode for ten minutes. With occasional stirring, fry the vegetables for the specified time. We keep the lid closed, tearing it off only for mixing.

Punch the fried vegetables with an immersion blender until smooth. Add salt, granulated sugar, tomato paste and black ground pepper to the resulting puree.

We select the "Stew" mode and cook the caviar for twenty minutes with the lid closed. Periodically open the lid and mix thoroughly to prevent burning.

My jars with soda solution, sterilize in any convenient way and dry. We do the same with the lids. Put hot caviar into prepared jars and immediately roll up with dry lids.

Let the seaming roll cool down and put it in a cool, dark storage place.
