Non-boiled apricot jam, prepared according to this recipe, has a beautiful bright color and an amazing aroma due to the nucleoli of the fruit, therefore it is called royal. It is prepared by soaking apricots in hot syrup for a long time and thanks to this heat treatment it is well stored. The nucleoli of the fruit must be tasted, and if they are tasteless, then they can be replaced with almonds or walnuts. Such jam is often flavored with citrus juice and rum, but this is to taste.

For the "royal" jam, we choose dense apricots with bright pulp. We rinse them thoroughly with cold water and wipe them dry with a kitchen towel. Then cut the apricots into halves with a sharp knife and remove the seeds.

The nucleoli must be removed from the bones. We break the bones with a hammer and take out the nucleoli from them. Then, to cleanse the bitter peel, put the nucleoli in boiling water for 1 minute, rinse on a sieve with ice water and clean. Place the kernels prepared in this way in the middle of the apricot halves.

We carefully put the apricots in a fireproof dish. In a separate saucepan, cook, for 5 minutes, the syrup from the amount of water and sugar specified in the recipe.

Then pour the apricots with kernels with boiling syrup and leave them at home temperature until they cool completely.

Pour the syrup from the cooled apricots through a sieve, boil it for 3 minutes and re-fill the apricot halves. We infuse apricots in syrup, followed by boiling it, 3-5 times in one day.

After this time, we carefully transfer the apricots with kernels to a dry sterile jar, fill it with syrup and seal the jar tightly. The "royal" jam is ready. We store it in a cool place.
