Blackcurrant, mashed with sugar and without cooking, is the simplest and most time-tested way of harvesting this berry for the winter. The ideal way to chop currants has always been to grind the berries with a wooden pestle and in an earthenware dish, but in our "fast" time they use kitchen gadgets, meat grinders, blenders or food processors. Since the currants are juicy and quite acidic, the optimal proportion of sugar and berries is 2: 1, but the jam is too sweet, so less sugar is added.

For this method of harvesting, the currants are prepared carefully, because the condition of the berry mainly determines its good storage in its raw form. The currants are sorted out and the stalks and small debris are removed. Then it is washed several times with cold water and must be dried by sprinkling it in a thin layer on a kitchen towel.

Prepared currants are crushed in any way. For a more homogeneous jam - using a blender, for jam with pieces of berries - twist into a meat grinder.

All dishes that the currants will come into contact with must be sterile or scalded with boiling water.

Then the calculated amount of granulated sugar is poured onto the mashed currants. For such a jam, it is important that the sugar is completely dissolved. The currants with sugar are periodically mixed with a silicone spatula or wooden spoon for 1 hour.

An hour later, the jam without boiling from black currant, mashed with sugar, will be ready. It is packaged in dry-sterilized jars of any volume, hermetically sealed with lids and stored in a dark, cold place, basement or refrigerator.
