There are desserts that can be prepared without baking. And one of the most famous is, of course, cheesecake. Its base can be easily prepared from cookies and butter, and the most delicate cheese filling can be stabilized with gelatin. Add berry sourness and enjoy the dessert melting in your mouth.

Grind shortbread cookies. This can be done in a blender, using a rolling pin, or a wooden puree pusher. Melt the butter and combine with the cookie crumbs. Take a split form and evenly distribute the resulting mass over it. Be sure to make the sides by pressing the crushed buttered cookies against the walls of the mold. Place the cheesecake base in the refrigerator for half an hour. Then, soak the gelatin in water and let it swell.

It is better to use fresh blueberries for our cheesecake. It must be sorted out from debris, leaves and spoiled berries, then rinsed and dried. Measure out two-thirds of the berries, grate the zest of one lime into it. Cook the blueberries over medium heat until the berries are tender. Remove the berries with a slotted spoon and transfer them to a separate plate. Cook the blueberry syrup for another 3-4 minutes. Remove the syrup from heat, cool it, add the remaining berries and refrigerate.

In a deep bowl, combine the cold cream, Mascarpone cheese, sour cream, sugar (50g), the zest of one lime and the juice of two limes. Whisk the ingredients until fluffy.

Heat the swollen gelatin over a fire until it is completely dissolved. Cool to room temperature and add to the cream cheese mass. Mix gently. Then add the blueberries that you removed from the syrup and transferred to a separate plate.

Remove the cheesecake base from the refrigerator and transfer the finished filling into it. Smooth with a spatula or spatula. If you wish, you can give the filling a beautiful relief. Put the cheesecake in the refrigerator until it solidifies completely. This usually takes about 4 hours.
