Blueberry compote for 3 liters for the winter

This recipe for making compote is as simple as possible. You will have to spend quite a bit of your free time and energy on it. Only three ingredients need to be used for this drink. But the result will surprise you with its rich and bright berry taste.

Transfer the berries to a large saucepan or bowl. Before doing this, be sure to smell the blueberries. If its aroma is sour or resembles the smell of alcohol, then the product has deteriorated. This berry cannot be used in cooking. Sort through the blueberries, removing any spoiled or damaged fruit. Pour water over the berries. Remove all floating debris from its surface. Then change the water and let the blueberries sit for 30 minutes. When the time is up, rinse the berries. Pour the blueberries into a colander so that there is almost all the excess liquid from the glass fruits. Place paper towels on a table or other flat surface. Place the berries on top of them. Leave the blueberries to dry.

We begin to prepare jars for the future compote. First, rinse them well under warm water. The lids must be scalded with boiling water. We will sterilize the jars with steam. The easiest way to do this is with a regular teapot. Fill it with cold water and put it on fire. When the water starts to boil, move the jar onto the spout of the kettle. Hold it in this position for 3 minutes. Then place the jars on a kitchen towel. Wait until they are completely dry.

Let's start preparing the syrup. Fill the pot with cold water and transfer it to the stove. When the water boils, start adding granulated sugar to it. It is best to do this gradually. This will dissolve the sugar faster. Its amount can vary depending on your desire. Changing the amount of sugar will make the compote more or less concentrated. Stir the syrup after each addition of granulated sugar. When the crystals are completely dissolved, boil the solution for another 5 minutes, stirring constantly. Then turn off the stove and remove the pan from it. The syrup must be filtered through cheesecloth. Thanks to this, the compote will turn out to be more transparent and attractive in appearance.

Transfer the berries to prepared jars. Then pour the prepared sugar syrup over the blueberries. Cover the jars with a lid. Fill a pot with water and wait for it to boil. Put a jar in it. Sterilize it for 20-25 minutes. The time will vary depending on the size of the can you are using. When the time is up, place the jar on the table and screw the lid back on. Spread a tea towel on a flat surface. Place the jars on it, turning them upside down. Wrap them in a warm blanket or towel. When the jars are completely cool, transfer them to a cool place.
