Cheesecake without baking with peaches

Peaches are juicy and fleshy fruits that perfectly complement desserts. The cheesecake with slices of this fruit turns out very tasty, it does not need to be baked, which greatly facilitates the preparation of the cheesecake.

For a shortbread cheesecake base, grind the shortbread cookies until finely crumbled. Mix the crumb with softened butter, you get an elastic mass.

Cover the round shape with cling film. Put a sand blank on the bottom of the mold and form a base cake from it, tamp it well. Place the cake pan in the refrigerator for 30 minutes.

Soak the gelatin for the cheesecake curd filling in cold water. After 15-20 minutes, heat the swollen gelatin in a water bath or in a microwave until it is completely dissolved.

Grind the curd with a blender or rub it through a sieve. Add sour cream, sugar to the curd mass, mix the ingredients well. Then pour in the orange juice and add the crushed zest. Add gelatinous mass and mix well again.

Remove the sand base from the refrigerator, place the curd base on top of it, flatten it, and set the cheesecake mold back for an hour to set.

Pour gelatin for jelly with peaches with 50 milliliters of peach compote. Add sugar to the rest of the compote, heat it until the sugar dissolves. When the gelatin swells, heat it in a water bath or microwave until it dissolves. Combine compote and gelatinous mass.
