Cheesecake without baking with sour cream

Cheesecake without baking with sour cream is a delicious cottage cheese dessert. Cheesecake turns out to be quite high in calories due to the use of a large amount of butter and homemade cottage cheese, but sometimes it is worth pampering yourself. Children love this dessert.

Ingredients

Cooking process

step 1 out of 17
Take the shortbread cookie.
step 2 out of 17
Break the cookies with your hands and grind into small crumbs using a meat grinder or blender.
step 3 out of 17
Melt 150 grams of butter, add to the chopped liver. Add a couple of tablespoons of granulated sugar and stir.
step 4 out of 17
Cover the form in which the cheesecake will solidify without baking with cling film or foil. Put the resulting mass of cookies on the bottom of the form. Spread evenly over the entire surface. Place the mold in the freezer for 20 minutes.
step 5 out of 17
Prepare 30 grams of gelatin and fill it with a glass of water.

Leave the gelatin to swell. Dissolve the gelatin completely in a water bath.
step 7 out of 17
Pass the cottage cheese through a meat grinder or chop with a hand blender.
step 8 out of 17
Remove the remaining butter beforehand so that it softens at room temperature.
step 9 out of 17
Add vanilla sugar to butter and beat with a mixer until fluffy white, gradually adding granulated sugar.
step 10 out of 17
Add grated cottage cheese, homemade cream and sour cream to the butter mass, mix with an immersion blender. Add melted gelatin in a thin stream and mix again with a blender.
step 11 out of 17
Transfer the curd-creamy mass to the base of shortbread cookies. Tighten the mold with cling film and put in the refrigerator to set for 5-6 hours.
step 12 out of 17
Wash and dry the strawberries thoroughly, cut in half.
step 13 out of 17
Put the berries in a deep saucepan, and cover with granulated sugar.
step 14 out of 17
Bring the strawberries to a boil, stirring constantly and cook for 5 minutes.
step 15 out of 17
Pour gelatin with water and let it swell, dissolve completely in a water bath. Add to cooked strawberries and stir.
step 16 out of 17
Pour the curd layer evenly with the resulting mass. Send the cheesecake to the refrigerator for 1.5 hours.
step 17 out of 17
Serve the finished cheesecake without baking in portions, garnish with fresh berries.

Bon Appetit!
