Soft cottage cheese cheesecake

In summer, we recommend baking a homemade cheesecake with a base of purchased cookies, with chocolate-sour cream filling, soft cottage cheese, berries and nuts. Such an explosion of tastes and textures will be remembered by your tongue for a long time.

Ingredients

Cooking process

step 1 out of 13
For the base, grind the shortbread cookies in a blender, food processor or coffee grinder. Remove the butter from the refrigerator 1 hour before cooking or melt in the microwave. Stir the butter into the crumb and knead everything with your hands.
step 2 out of 13
Prepare a split baking dish. At the bottom, put a circle of food parchment so that later the dessert can be easily removed from the mold.
step 3 out of 13
Put the sandy-oil mass on the bottom of the mold, tamp it thoroughly with your fingers, a spoon or a glass along the bottom of the mold, and also form the sides.
step 4 out of 13
Put frozen or fresh black currants in the base. Remove the form with the base in the refrigerator for half an hour so that the crumb has time to harden.
step 5 out of 13
Put soft cottage cheese in a bowl, add 200 g of granulated sugar to it. Beat the mass well with a mixer.
step 6 out of 13
Add the egg to the mass and beat again until smooth.
step 7 out of 13
Pour the mixture into the solidified base and place the cheesecake mold in an oven preheated to 180 degrees for 1 hour.
step 8 out of 13
To prepare the chocolate filling, you need to add cocoa powder to the sour cream.
step 9 out of 13
Pour 100 g of sugar there, beat everything well with a mixer.
step 10 out of 13
Fry the almonds in a dry frying pan, and then chop with a sharp knife.
step 11 out of 13
After an hour, remove the cheesecake from the oven, pour over the filling. Return the dessert to the oven for another 20 minutes. Next, leave the cheesecake in the oven by opening its door until it cools completely.
step 12 out of 13
Remove the delicacy from the mold, transfer to a dish and sprinkle with toasted almonds.
step 13 out of 13
Cut the dessert into portions and use with hot drinks.

Bon Appetit!
