Caramel cheesecake

Incredible caramel cheesecake based on the popular Oreo cookies. You don't need to bake it at all! We send all the ingredients (both the cake and the cream) to solidify in the refrigerator. The taste is simply amazing! Soft, delicate, with subtle notes of peanut butter! I just want to try it!

Oreo cookies (12 pcs.) Break into halves and remove the filling. It needs to be postponed, it will still come in handy.

Put the liver in a blender bowl and grind it into small crumbs.

Pour the cookies into a bowl and start pouring milk in small portions and stirring. You need so much milk to make a dough that can be molded into a lump (as in the photo).

Now we need food parchment and a ring (16 ml, for a larger diameter, we need to increase the number of products). We install the ring on parchment on a hard surface, and lay out the walls of the ring with cling film.

Now we distribute the prepared dough inside the ring, kneading it with our hands. We put the dough in the refrigerator so that it solidifies.

Preparing the cheesecake cream. To do this, soak the gelatin.

In a bowl, mix the curd cheese with the Oreo cookie filling. To soften the cheese, put the mixture in the microwave for 30 seconds. (if this is not enough, add another 30 sec.).

Pour 50 ml into a saucepan. cream, add peanut butter and caramel. Heat, stirring until smooth.

Beat the rest of the cream with a mixer until thick foam.

We squeeze out the gelatin and send it to the mass in a saucepan. Stir and wait until the gelatin dissolves.

Now we combine two masses (curd and gelatinous). Since there are quite a few of them, it is best to do this with a mixer.
