Today we will prepare a cheesecake dessert, beloved by many, called cheesecake. It will be based on Philadelphia cheese, thanks to which the cheesecake acquires a delicate creamy taste, to which cream will help us to complement. Our cheesecake will be framed in a crispy shortbread base, which we will prepare from flour, butter and powdered sugar. Spending a considerable amount of time on preparation, as a result, we get a great dessert, which is enjoyed in many restaurants around the world.

Grate well-chilled butter on a coarse grater, add flour, salt and grind everything with your hands into small crumbs. After that add the egg and icing sugar and knead the dough with your hands. Then we collect it in a ball and wrap it with cling film. Put in the refrigerator for 50-60 minutes.

Separate the whites from the yolks. In a bowl, combine Philadelphia cheese, sugar and flour. Then add the yolks one at a time, each time, stirring well with a mixer. Then, without turning off the mixer, add cream in a thin stream. We will get an airy homogeneous mass.

In a separate bowl, using a mixer, beat the required amount of proteins with a pinch of salt, until stable peaks. Then we mix the proteins with the curd mass.

We take the dough out of the refrigerator, put it between two sheets of baking paper and roll it out so that its thickness is 4-6 mm. We put the dough in a mold with a diameter of 24 cm, wrapping it on the sides. Put the curd filling in the dough and set it to bake in an oven preheated to 170 degrees for 40 minutes, then reduce the heat to 150 degrees and bake for 20 minutes, then reduce the heat to 125 degrees and bake for another 10 minutes. After that, turn off the heat and leave the cheesecake to cool in the oven with the door open for about an hour.

Remove the finished cheesecake from the mold and let it cool for another 1-2 hours, so that the filling becomes denser, so it will be easier to cut the cheesecake into portions.
