Wild berry cheesecake

Cheesecake is made from cream cheese or cottage cheese. Seasonings are often added to the filling: vanilla, chocolate, cinnamon. But fruits and berries are best combined with curd or cheese mass. You can even use wild berry jam.

Combine 100 grams of softened butter, 40 grams of powdered sugar, one egg, salt and flour, knead the dough. Wrap it in plastic wrap, place in the refrigerator for half an hour.

Frozen berries should be completely defrosted beforehand. Sprinkle the berries with 50 grams of powdered sugar, put on fire and bring the mixture to a boil.

In a separate container, mix 15 grams of starch and orange juice, pour this mass over the berries, stir, bring to a boil, cool and rub the contents of the pan through a fine sieve.

Remove the dough from the refrigerator, divide it into two equal portions. Roll one part into a layer 0.5 centimeters thick. Cover the baking dish with parchment, place the dough there, make punctures on it with a fork. Bake the cake for 12 minutes at 180 degrees.
