Blueberry cheesecake

Blueberries perfectly complement the delicate and airy cheesecake filling. Blueberries can be mixed with curd mass and decorated with berries, laying them on top.

Ingredients

Cooking process

step 1 out of 8
Mix 150 grams of softened butter with 125 grams of sugar and vanilla sugar, add one egg. Pour in the sifted flour and baking powder, knead the dough.
step 2 out of 8
Cover the form with parchment. Put the dough on the bottom of the mold, form a crust and sides for the cheesecake from it. Place the mold in the refrigerator for 30 minutes.
step 3 out of 8
Divide the remaining 4 eggs into whites and yolks. Mash the yolks with 175 grams of sugar. Beat the whites with salt until a firm foam.
step 4 out of 8
Mix cottage cheese with yolks, add starch and mix again. Add the whipped egg whites in portions, mix with a spatula. You should have an air mass.
step 5 out of 8
Put the resulting curd mass on the base cake, level its surface.
step 6 out of 8
Set aside some of the berries for decoration, add a tablespoon of sugar to the rest, beat with a blender. Then add a tablespoon of starch and stir.
step 7 out of 8
Put the berry mass on the surface of the cheesecake. Place the dish in an oven preheated to 180 degrees for 50-60 minutes.
step 8 out of 8
Wait for the cheesecake to cool in the mold, decorate the dessert with berries and mint leaves, sprinkle with powdered sugar.

Bon Appetit!
