To make your life easier and save cooking time, you can make a cheesecake without baking. The basis for such a cake will be biscuit crumbs, compacted with melted butter, and the cheese layer will harden well and keep its shape thanks to the gelatin. As a result, you will have a wonderful cheesecake on your table that does not require any complex manipulations in preparation.

In a blender, beat the cookies to create a soft crumb. Then the butter needs to be melted and added to the crumb.

Stir well to completely saturate the sand crumbs.

In order to make your cheesecake tall, set the diameter in a split form to no more than 18-20 cm if you are making a cheesecake for the portion of products indicated in the recipe. Spread the crumb evenly inside the ring, seal it, pressing it with something heavy, then hide it in the refrigerator to freeze the mass.

Soak gelatin in 100 ml of cold water and let it swell for 15 minutes (the exact swelling time will be indicated on the package). Stir vanilla sugar and powdered sugar into soft cream cheese using hand blender. Pour the cream into this mass and stir everything together with a whisk to get a homogeneous cream.

In a water bath, heat the gelatin for a couple of minutes, but in no case let it boil!

Let the gelatin cool so that it becomes only slightly warm, then pour it in a thin stream into the butter cream, stirring the mass with a whisk.

Put the cheese mass on the chilled crust, leveling its surface. Spin the plate of cheesecake without lifting the bottom of the table to make the top of the cake even smoother. Place the cheesecake in the refrigerator to freeze completely in 3-4 hours.
