Cheesecake with kiwi

A hearty, cheesy and vitamin-rich cheesecake, thanks to the addition of kiwi fruit, can be prepared according to this simple recipe. This cheesecake does not require baking, which greatly simplifies the life of the hostess. But you really want to pamper your family with something tasty, and our cheese dessert is one of the very dishes that leaves no one indifferent!

Grind the cookies in a blender until finely crumbled.

Melt the butter and mix with the cookie crumbs.

Tamp the mass firmly on the bottom of the baking dish. The bottom can be lined with parchment. Put the mass in the cold for 30 minutes so that it hardens.

Soak gelatin in 100-120 ml of water for 10-15 minutes. Heat the gelatin over a fire, without bringing it to a boil, stir to completely dissolve.

For the curd layer, stir the curd with sour cream, vanilla and sugar with a blender. Add gelatin to the mass and mix. Pour this mixture over the cookie crumbs. Refrigerate cheesecake for 2 hours.

Place the kiwi on the curd layer when it hardens (you can lay the kiwi tightly, covering the cheesecake completely).

Prepare the jelly as indicated on the package. It is best to use kiwi-flavored jelly. To make the jelly very dense, use less water than indicated on the package.
