Ingredients

Cooking process

step 1 out of 15
Boil water (250 ml), then add granulated sugar (120 g) to it, wait for it to completely dissolve. Then you need to pour the prepared mixture over the cherries and leave for 2 hours. During this time, the cherries will completely defrost.
step 2 out of 15
While the berries are being prepared, we move on to the rest of the preparations. Dilute gelatin with water and let stand for 15 minutes. The gelatin should swell.
step 3 out of 15
We place the cookies in a bag and use a rolling pin to roll them until small crumbs are formed. You can also use a blender for convenience if desired.
step 4 out of 15
Melt the butter and then mix with the cookie crumbs.
step 5 out of 15
We spread the resulting base on the bottom of a split form (you can pre-cover it with parchment), tamp it and send it to the refrigerator for at least 30 minutes.
step 6 out of 15
We put the present gelatin on fire, heat it and bring it to complete dissolution. It is important here not to let the gelatin boil, you just need to heat it up.
step 7 out of 15
Whisk the cream and granulated sugar.
step 8 out of 15
Then add mascarpone to the resulting mixture and mix all the ingredients until a homogeneous mass is formed.
step 9 out of 15
After that, add gelatin to the rest of the components. We mix everything.
step 10 out of 15
Fill the base of the cookies with the resulting mass, level the surface and place in the refrigerator for 2 hours.
step 11 out of 15
We shift the cherries into a colander, let the liquid drain. Do not pour out the cherry juice. Put the berries on the cheesecake.
step 12 out of 15
Dilute gelatin in 40 ml of water and leave for 15 minutes.
step 13 out of 15
Measure out 250 ml from cherry juice and put it on fire. We heat the juice to a temperature of 60 degrees. Then we mix the heated juice and gelatin.
step 14 out of 15
Pour the cooled juice with gelatin onto the cherries and remove the mold with the cheesecake in the refrigerator until the jelly hardens completely.
step 15 out of 15
Delicious and aromatic cherry cheesecake is ready! You can help yourself!

Enjoy your tea!
