Classic ricotta cheesecake

Ricotta cheesecake is an incredibly delicious dessert for the whole family! It turns out to be moderately sweet and airy. In the classic version, ricotta cheesecake consists of a sandy base and a delicate cream. Such a dessert may well decorate the festive table. The extraordinary taste of the cheesecake is achieved due to the correct ratio of all ingredients.

Grind the cookies into small crumbs using a blender. Next, mix the crushed cookies with butter melted in a water bath.

Put the cookie base into the baking dish, tamping it down and forming low sides. We send the base to bake in a preheated oven (up to 180 degrees) for 15 minutes.

Put the ricotta in a convenient container. We begin to beat the cheese, gradually adding powdered sugar to it and adding vanillin.

Add a pinch of salt and eggs to the cheese filling one at a time, beat the cream for about 5 minutes more.

Next, add lemon zest to the filling. Lime must be cut into two parts and squeezed out of juice, added to the cheese filling. Alternatively, you can substitute lemon juice for lime juice. After that, pour in the cream and beat the cream for another 5-7 minutes.
