Cheesecake with cherries

Cheesecake with cherries is one of the options for a delicate delicacy with a pleasant sourness. Cheesecake is not low in calories, but as a pleasant end to a festive celebration, it will not be heavy, unlike the various cakes.

Pour 10 grams of gelatin with 100 milliliters of cream, pour 20 grams of gelatin with cherry juice. Remove the butter from the refrigerator in advance. Grind shortbread cookies with a blender or meat grinder. In a small bowl, stir together the crushed cookies and softened butter.

Spread the resulting mass evenly over the bottom of the mold in which you will collect the cheesecake. Place in a well-preheated oven for 10 minutes and bake at 160 degrees.

Remove the mold from the oven and cool.

Combine cream cheese and condensed milk in a deep bowl. Bring to a homogeneous mass with a hand blender.

Dissolve the swollen gelatin in the cream in a water bath. Pour the loose gelatin into the cheese mass, stir. Beat the remaining cream with a mixer until dense.

Dissolve the swollen gelatin in cherry juice in a water bath. Pour into the cherry mass, mix thoroughly. Separate 75 grams of the cherry mass and combine with the deferred cheese mass, mix well. Put the resulting mass in a mold and smooth. Place the cheesecake in the refrigerator.

After half an hour, take the mold out of the refrigerator and pour over the cherry jelly. Place in refrigerator for 3 hours. After the cheesecake has set, gently remove it from the mold. Cut into portions, garnish with fresh mint leaves.
