In this recipe, you are invited to prepare a light dessert from cottage cheese and cherries without baking. Such a cheesecake is prepared based on shortbread cookies. Any berries can be used. For pouring berries, we take either berry jelly, or berry juice and gelatin.

Pour gelatin into a cup or bowl, pour milk and leave to swell for 40 minutes.

Grind shortbread cookies with a blender to a crumb state. Add melted butter to it, mix well and place tightly in a split ring. Put the cookies in the refrigerator for 20 minutes.

Cottage cheese, grated on a sieve, put in a deep bowl, pour the amount of sugar and vanilla indicated in the recipe to it, pour the melted butter and use a blender to beat into a homogeneous mass.

Heat gelatin soaked in milk over low heat or in a water bath and stir until it is completely dissolved. Then we combine the dissolved gelatin with cottage cheese and mix again.

Pour the prepared curd filling into a mold on a layer of cookies and put the mold again in the refrigerator for 30 minutes so that the gelatin hardens.
