Cheesecake in a glass

Here's a recipe for a quick-to-make cheesecake in a glass. For the base of the cheesecake, we will use a regular sponge cake, and stabilize the creamy filling with gelatin, since we will have the cheesecake without baking. As a result, we will have a delicious and bright strawberry dessert with an unusual presentation.

Ingredients

Cooking process

step 1 out of 5
Put the cream cheese in the bowl of the food processor, add the powdered sugar and vanilla essence. Beat all ingredients until smooth.
step 2 out of 5
Place the gelatin in a small heat-resistant container, fill it with milk at room temperature and leave for a couple of minutes. Then we put on fire, melt the gelatin, stirring continuously, and remove from heat. Let the mass cool slightly. Add 2 tablespoons of cheese mass to the gelatinous mass, mix well. Combine the gelatinous and cheese masses and knead well with a whisk so that the gelatin is evenly distributed and does not form lumps.
step 3 out of 5
Put the biscuit cake on the work surface, cut it in half lengthwise. Cut out circles of a slightly smaller diameter from half than a cheesecake glass. We put the biscuit on the bottom of the glass, then pour the creamy mass on top. We put it in the refrigerator so that the gelatin seizes, and at this time we will do the strawberry sauce.
step 4 out of 5
Put strawberries in a blender, add sugar and starch. Grind all ingredients into puree. We spread the strawberry puree in a saucepan, put on the stove and bring to a boil, while stirring constantly. Remove from heat and leave at room temperature until it cools completely. In the process of heating, our starch swelled, it thickened the liquid strawberry puree a little.
step 5 out of 5
Pour the strawberry puree into cups on the creamy mass and put it back in the refrigerator until it solidifies. Before serving, decorate the dessert with strawberry slices and a sprig of mint. Bon Appetit!
