Chicken tabaka is great for a family dinner - both children and adults love the crispy brown roasted chicken. To make the bird tasty and juicy, marinate it with lemon juice and garlic. And at the end of cooking, grease it with an additional mixture of hot spices. The last step can be skipped if the family does not like spicy foods. But fresh herbs will definitely not hurt when serving - with it, the chicken looks more attractive and appetizing.

We wash the chicken, cut off the excess skin and fat, dry it with a towel and cut it along the sternum, without touching the back.

We open the carcass into a layer with the skin up and beat it off with a kitchen hammer. To prevent splashes from flying around when beating, cover the chicken with cling film. We apply force mainly not to the fillet, but to the bones and joints, so that the carcass becomes flat and pliable.

In a small bowl, mix lemon juice, olive oil, shake until relatively homogeneous.

Sprinkle the beaten carcass with salt, black pepper and pour the prepared lemon-oil mixture. Rub the spices into the surface of the skin and meat with our hands. We remove the bird to marinate in the refrigerator for two to three hours.

In a frying pan, heat odorless vegetable oil and butter.

Put the carcass back down in the pan. We cover the chicken with a lid or an inverted flat plate of a smaller diameter, and place the weight on top. For example, a saucepan of water or a heavy kettle. Fry at medium-high temperature for fifteen minutes.

After the specified time has elapsed, we turn the chicken over to the other side, we also set the load on top and continue to fry for another fifteen minutes.

In a separate container, mix chopped chives and finely chopped chili. Add ground coriander, black pepper, paprika, chicken spices, soy sauce and vegetable oil.

Five minutes before cooking, grease the chicken with the resulting spicy mixture on all sides and continue to fry. Transfer the finished tobacco chicken from the pan to a plate, sprinkle with chopped herbs and serve hot.
