A feature of this recipe is that when frying, the chicken carcass is strongly flattened under the press and pressed against the bottom of the pan. Due to this, the meat is perfectly fried, it turns out juicy, and the top is covered with a crispy crust.

Rinse the chicken carcass well with water, dry with paper towels and cut in the middle of the breast. Unfold the carcass and place it on a cutting board, cover with cling film and beat with a kitchen hammer.

Chop the coriander seeds, peel the garlic and pass through a press. Combine coriander, garlic, cumin and black pepper. Rub the chicken carcass well with salt and spice mixture on both sides.
