Among the many recipes for salting lard, "ladies" lard is distinguished separately. Whether the ladies are the authors of this recipe remains a question, but the fat turns out to be unusually tender (melts in the mouth) and fragrant, for which both women and men love it. For such fat, only filtered water is taken. The lard acquires its "ladies'" taste only 5–6 days from the time of salting.

Pour filtered water into a separate bowl, add sugar and salt and put chopped bay leaves. Sprinkle the pots of pepper whole or chopped in a mortar, so there will be more pepper aroma. Boil the brine for 3-4 minutes and then cool.

We wash the piece of bacon selected for salting well with cold water, scraping the skin with a knife, then dry it with napkins and cut into pieces of any size.

We clean and chop the chives in any way. Rub each piece of bacon with chopped garlic and put it in a bowl for salting. We put the bacon not too tightly so that the pieces are well salted.

Then pour lard with cooled brine. On top of it we place a flat plate and any weight. We leave the lard in the brine for one day at normal home temperature. Then we put it in a refrigerator or another cold place for another 5 days.

After this time, you can taste the "ladies'" bacon. We take out pieces of bacon from the brine, dry them, wrap them in foil and send them to the freezer.
