Homemade kvass like from a barrel

Barrel street kvass is usually made from chicory. In that recipe, you are offered a different way of making homemade kvass, which is much tastier than the store one. We prepare kvass from black bread with the addition of yeast and raisins. Homemade kvass will turn out to be carbonated with a pleasant aroma and taste. You can drink it at any time and make a cold soup with it.

First, let's prepare all the products for making homemade kvass.

Black bread, preferably "Borodinsky", cut into thin slices and dry for 20 minutes in the oven to make croutons.

We transfer the croutons to a clean 3-liter jar and fill them with two liters of boiling water. Cover the jar with a napkin and leave it for 12 hours (you can overnight) to infuse.

Then, after this time, through a gauze folded in 6 layers, filter the bread infusion into a separate dish.

We squeeze the remaining bread with the hand of the mute and transfer it to the same jar. Re-pour the bread with two liters of boiling water and leave for 1 hour to cool the drink a little. We re-filter the drink through cheesecloth into another dish.

Mix the drinks after the first and second spin. We leave a lot of the drink in the yeast bowl.

Put fresh yeast in a bowl and mix well until smooth, and pour this mass into a bowl to kvass.

Pour the amount of sugar specified in the recipe into the drink and put well-washed raisins. We mix everything. Cover the dishes with a lid and leave for 8-10 hours at normal home temperature.

During this time, the fermentation process will be completed in kvass. Kvass will be covered with lush foam and will acquire a pleasant aroma and taste. Pour the prepared kvass into jars or bottles and chill in the refrigerator.
