Dorado on the grill

Dorado is a delicious gourmet fish that does not require additional ingredients and is good on its own. A little olive oil, a couple of pinches of spices and salt are enough to emphasize the flavor of the dorado. Before baking on the grill, we recommend greasing the grill with vegetable oil - this will keep the delicate fish intact when you remove it ready-made from the grill onto a plate.

We clean the fish from the scales, cut the abdomen, remove the insides. Leave the head and tail in place, but remove the gills. We wash the prepared carcasses thoroughly with running water and dry them inside and out with paper towels.

We cut each fish on both sides with a sharp knife. We make shallow, cruciform incisions. Their task is to speed up the pickling process. Mix the spices in a small bowl. Put salt, coriander, black ground pepper, dry ground red pepper, dry ground hot pepper. Grind everything together for even mixing. We rub each fish inside and out with these spices. Then pour the olive oil over the dorado and distribute it with our hands over all the carcasses. We leave the fish to marinate for thirty to forty minutes.

After the marinating time has elapsed, grease the grill with vegetable oil and place the prepared fish on it. We send the grate to the grill with embers. Open flames are not allowed. We bake the dorado until tender - the process will take approximately ten minutes.

As soon as the fish turns golden, you're done. Do not forget to turn the grate on opposite sides literally every one and a half minutes for even heat treatment.

We remove the finished fish from the grill, carefully transfer it from the wire rack to a plate and serve it hot with fresh herbs, lemon, vegetables.
