Yeast cake with lingonberries and cottage cheese

A hearty and tasty pie that will appeal to those who do not like the concentrated flavor of berries. Here it is leveled by a curd layer, due to which the taste of the cake is soft and with a pleasant sourness.

Ingredients

Cooking process

step 1 out of 10
In a deep bowl, combine the egg and sugar. Add salt and use a mixer to beat until a firm foam is obtained.
step 2 out of 10
Heat the milk, add sugar and yeast and stir until the dry ingredients are completely dissolved. Set the mixture aside for a couple of minutes until a frothy cap forms, then pour into the egg froth and mix thoroughly.
step 3 out of 10
Sift the flour through a fine sieve, getting rid of lumps, and add it in portions to the dough, kneading well after each addition.
step 4 out of 10
Add vegetable oil while kneading to make the dough more elastic and less sticky to your hands. Form the dough into a lump, tighten with cling film or cover with a towel and leave in a warm place for an hour for the dough to come up.
step 5 out of 10
In the meantime, prepare the filling. Rinse the lingonberries under running water, being careful not to damage the berries, and pat dry on a towel to remove excess moisture. Rub the cottage cheese through a fine sieve to obtain a more uniform consistency, add sugar and eggs to it.
step 6 out of 10
Mix everything until smooth with a mixer, adding starch and salt in the process.
step 7 out of 10
Add honey to the resulting mass and mix again until smooth.
step 8 out of 10
Separate a quarter from the dough to decorate the pie, and stretch the rest over a greased baking sheet. Put the lingonberries in an even layer on the dough and sprinkle with a little sugar on top. Then fill the berries with the curd filling.
step 9 out of 10
Roll the rest of the dough into a layer, cut into strips and lay on top in the form of a diagonal grid. Clip the ends of the strips to the sides.
step 10 out of 10
Bake the pie in the oven at 200-220 ° C until the dough is browned. This takes about 60-80 minutes, depending on the thickness of your dough and cake in general.
Bon Appetit!
